Tides were low today, so I took advantage of this by loading my clients up on the mud boat and heading out towards the St. Martins River in Ozello (or, as the locals call it, Ozella). The trout bite was on fire today, and while I was filleting up our full four-man limit of trout, I was reminded of a little recipe I use for a topping when making fresh catch trout tacos!
Here's is a yummy Citrus Jalapeño Salsa that will bring your trout tacos to the next level!
Ingredients
1 diced jalapeno
1/2 cup diced mango
1/3 cup red bell pepper
1/3 cup diced red onion
1 teaspoon fresh cilantro
1 fresh squeezed lime
Salt & pepper to taste
